Re:Soy Milk-Calcium? - 2005/06/10 02:27
Soymilk is quite low in calcium and unless it is fortified then it has nowhere near the same amount of calcium as moo juice. It also needs added vitamin B12 to give it a nutiritive value similar to that of cows` milk. Most soymilk that you buy is fortified. You can do this by adding powdered calcium carbonate and a crushed vitamin B12 tablet to the milk after you have made it. I am not sure how the home soymilk maker works as I am in Australia and have never heard of it here. If you are making about 6 cups of soymilk then you would add 1 Tbsp (about 2g) of calcium carbonate and 1 (25 microgram) tablet of vitamin B12 to the mixture and then you would have to remember to shake it before you served it. I think you would also need to add a little sploosh of oil to help emulsify everything. I hope this info helps!!!
