This is from Cooking with Kurma:
1/4 cup (185ml) softened butter 1/2 cup (125ml) raw or brown sugar 1 Tablespoon (20ml) buttermilk or yoghurt 1 1/2 cups (375ml) self-raising flour 3/4 cups (185ml) pecan nuts, coarsely chopped 1 1/2 cups (375ml) unsweetened carob chips or coarsely chopped carob buttons
1. Pre-heat the oven to 180c/355F. Beat the butter and sugar together in a bowl until light and fluffy. Add the buttermilk or yoghurt and beat thoroughly.
2. Gold in the flour, nuts and carob chips, and combine well. Form the mixture into 24 balls. Flatten into patties and place lslightly apart on an ungreased baking tray. Bake for 15-20 minutes, or until the cookies are lightly browned. Remove and allow the cookies to fully cool before serving or storage.
I am not sure how vegan substitutes for the yoghurt and butter would go but you could try.... You could also leave out the pecan nuts and just add some extra carob. These last quite well in an airtight container, although they generally don`t last that long!!! I have also made them using spelt flour and other gluten free flours, these will sometimes leave a slight aftertaste. Also, if you use sweetened carob, then you may want to reduce the amount of sugar a little bit otherwise they will be too sweet!!! Carob chips are basically milk powder and carob powder held together by some sort of fat (vegan or otherwise) so yes, they do melt like chocolate. AND, most importantly ENJOY!!
